When Jasper first appeared in “The Story Girl Earns Her Name”, Sara found him taking pictures in a field and chased him into his workshop. The building used for Jasper’s workshop in this episode was actually on Prince Edward Island and was shot with a second unit crew. In fact, the actors in the photo below are doubles, not Sarah Polley and RH Thomson:
Jasper’s House in Season 1 was an old farmhouse, just North of Toronto as seen below:
In Season 2, Jasper’s workshop in “May the Best Man Win” was actually the chicken coop beside the King Barn. You can actually see it in the background of the shot below of Sara and Jasper walking down the road:

Also in Season 2, the decision was made to build a cannery set for “Aunt Hetty’s Ordeal”. The photos below show the cannery being built and what it looked like when it was finished:

In season 3, Jasper and Olivia got married in “Ties that Bind” and they needed a place to “live”. However, by that time the Avonlea backlot was getting kind of full and it was difficult to find a place to build a new set. The solution was to use the back side of the cannery set and make two sets out of one. If you look carefully at the roof lines of the Cannery and the Dale House you can see that they are the same building.

The cannery was also used as the exterior of Jasper’s workshop as seen in this photo from “After the Honeymoon”:
So with a little bit of ingenuity and “movie magic” we were able to make Jasper and Olivia’s house, workshop and eventually their Cannery all the same building.
